TASTING NOTES: This wine boasts traditional Grenache characteristics of spice, bright red fruit, and cedar as it opens, and juicy, spice-laden flavors with medium body on the mid palate and a long finish.
WINEMAKING NOTES: 100% Grenache. We bled off a portion of the juice from these grapes and produced a rose from the saignee. This allowed us to produced a red wine with greater concentration due to a higher ratio of grape skins to juice. The wine completed fermentation in 10 days and was pressed to barrels for aging.
FOOD PAIRING: Pork belly, beef stroganoff, cassoulet, skirt steak, vegetable casserole.
AGING: Aged in 40% New American Oak, 40% New French Oak, and 20% neutral oak for 18 months.
